Vanilla Snickerdoodle Cookies

Sometimes when life gets ya down you just need to remember what makes you happy and do it.  No matter how tired you are.  No matter how sad you are.  No matter how fed up you are and just want to sit on the couch and be angry at the world.  Baking makes me happier than anything else.  I’m glad after a week of the blahs, I finally dove back into the happiness and brought back a cookie recipe.

What you will need: 1 cup almond flour, 1 tbsp coconut oil, 2 tbsp granular sweetener, 1/4 tsp vanilla, and 1 egg.

Mix together the almond flour and coconut oil with a fork until well combined. Add egg, sweetener and vanilla. Mix until dough forms. Roll dough into small balls. Press them down with the palm of your hand, until about half inch thick or so. Sprinkle generously with cinnamon. Bake at 325 for 12-14 mins depending on how soft or crispy you would like them.

I made some soft and some crispy. Both were equally delicious!

    • Aww! My darling! Yeh girl! Been trying to be more active on here lately 🙂 not even gonna lie, I thought of you while I was making these cuz of that time you tried to make some of your almond flour cookies out of coconut flour for me to see if it would work 😘 that meant so much to me haha

      • Haha I love it! At least you figured out how to make them not totally suck 😂 I can’t wait to see what you whip up next! And I love how you avoid fancy ingredients. I hate recipes that call for things I do not and will never have on hand (though I guess being gluten free I’m guilty of those types of recipes). 😉

    You may have answered this somewhere else but I’m just now getting into reading your blog 🙂 But, what kind of sweetener do you prefer to bake with in your recipes? Like this one calls for granulated, what tastes the best?
