Coconut Flour Pancakes 

What you will need:

4 eggs

1/4 tbsp baking powder

1/4 cup coconut flour

2.5 tbsp granular sweetener

3 tbsp coconut oil (partially melted)

1/4 cup heavy whipping cream

Mix all ingredients together well and let sit for 5 mins. You don’t need to add any butter or oil to the pan due to the coconut oil in the batter! Recipe makes 9 medium size pancakes!

    I’m trying these this morning! I found another keto pancake recipe that was mostly eggs and cream cheese and some coconut oil (and I added cinnamon and vanilla) They are super difficult to make, but are delicious – end up tasting like french toast. However, I’m very curious what these will be like with the coconut flour – sound and look promising! 🙂

    • Yes! I have made those cream cheese ones so many times, and while they are delicious, they never turned out as well as expected haha I was quite surprised at how seemingly perfect they were with coconut flour! I hope you love them! Let me know how it goes!!

      • Aww! Thank you so much!!! im excited that you’re excited! haha I’ve done keto off and on for a 2 years but have been back completely since Feb 2015. Its been amazing how many things it has healed in my body. Im never turning back! Im so happy that you have had much success with it as well!!

        Verdict on the pancakes: they were amazing! First, the texture was perfect: just like regular flour pancakes, and the coconut oil certainly made them non-stick without any effort. I seem to be a little sick of coconut flour right now, but this wasn’t overbearing, especially after I added lots of butter 🙂 I wonder too if I could add some blueberries for something different too. (I do eat berries, not sure if you do). One more thing is my husband, who doesn’t eat keto and could be described as somewhat picky, loved them as well. He said he’d eat them any time I wanted to make them. Thanks for sharing the recipe! This makes me want to start a recipe section on my blog…if for nothing else than to help me get organized with recipes. (For example yours is scrawled on a post-it note…)

    These look good! I also wanted to share a recipe I found somewhere, it’s been so long ago. It’s for pancakes, 2 oz of cream cheese, one egg, cinnamon and vanilla extract if you want. Blend them together, and they taste like French toast!
