Keto Chocolate Cheesecake Truffles 

On a rainy day there is only one practical thing to do: make desserts, duh! So this is what I got inspired to make on this rainy afternoon!… What you will need:

1 8oz block softened cream cheese

2 Russell Stover premium dark chocolate candies (or whatever dark chocolate you have on hand)

1/2 tsp dark chocolate cocoa powder

2 drops vanilla extract

1 heaping tbsp granular sweetener

Directions:

I softened the cream cheese in the microwave on 30 sec intervals (stirring in between) until smooth. Then I melted the chocolates, also at 30 sec intervals with just a tiny bit of butter so they didn’t burn. Mixed in the chocolate and the rest of the ingredients into the cream cheese and then chilled it in the fridge for 2 hours.

On a plate I put 1 tsp of cocoa powder and 1 tsp of the sweetener and mixed them together. Rolled the truffle batter into balls and then rolled them in the cocoa/sweetener mixture. Set back into the fridge for about 30 mins so they could reset after being handled.

You may want to kiss me after trying these. .. And I’m totally ok with that 😘

Vanilla Snickerdoodle Cookies


Sometimes when life gets ya down you just need to remember what makes you happy and do it.  No matter how tired you are.  No matter how sad you are.  No matter how fed up you are and just want to sit on the couch and be angry at the world.  Baking makes me happier than anything else.  I’m glad after a week of the blahs, I finally dove back into the happiness and brought back a cookie recipe.

What you will need: 1 cup almond flour, 1 tbsp coconut oil, 2 tbsp granular sweetener, 1/4 tsp vanilla, and 1 egg.

Mix together the almond flour and coconut oil with a fork until well combined. Add egg, sweetener and vanilla. Mix until dough forms. Roll dough into small balls. Press them down with the palm of your hand, until about half inch thick or so. Sprinkle generously with cinnamon. Bake at 325 for 12-14 mins depending on how soft or crispy you would like them.

I made some soft and some crispy. Both were equally delicious!
