Zucchini Gratin

I’m pretty sure that you could make anything with Gratin at the end of it and it would be a masterpiece.  Matt was eating some Au Gratin potatoes the other day and I was quite jealous. So this is when I decided to TAKE BACK MY LIFE AND GRATIN SOME DAMN ZUCCHINIS….

What you will need:

2 med/large zucchini

1.5 cups heavy whipping cream

2 tbsp butter

1/2 cup shredded parm cheese

1/2 cup shredded white cheddar

1 tsp garlic powder

1 cup crushed plain pork rinds

Preheat your oven to 400

Start by adding your butter and cream to a medium size pot!img_2496

Let that simmer and cook down.  Once it starts to bubble you can add your cheeses and garlic powder and let it simmer until its thick enough to coat the back of your spatula or spoon. In the meantime, cut up your zucchini into thin slices.

I put mine into my baking dish as I went to see how much I would need. I initially thought that I would need 3-4 zucchini, but I ended up only needing 2.

After that I added my zucchini to the pot with the sauce to cook them a little bit before heading to the oven! I let them cook on medium heat for 8 mins!

After that add your mixture to your baking dish and top with your crushed pork rinds and a little bit extra cheese if you like.  Sadly I forgot to take a pic of that step, as I was apparently very anxious to get this into the oven.

I baked this on the bottom rack for 25 mins! Make sure to watch it as oven temps and times vary; just bake until the top is brown and the mixture is nice and bubbly!

And as you pull this out of the oven I promise you that Angels will sing ❤

Enjoy!

Spaghetti Squash Chicken Popper Casserole

Whew! What a title!! My dear friend Danielle posted earlier today about a jalapeño popper Casserole using spaghetti squash. It may have been one of the most glorious dish I’ve ever seen! As soon as I saw it I knew it would be in my belly by the end of the day.

What you will need:

1 spaghetti squash

4oz cream cheese

1 egg

Salt/pepper

Diced chicken  (roughly two cups)

Jalapeños (amount to your liking)

1 cup shredded cheddar

Start by preheating your oven to 400.  Cut you squash in half, long ways and place cut side down on a greased baking sheet. (I like to use bacon grease on mine, it gives it an UHmazing flavor). Cook your squash for 50 mins! When it’s done scrape out the halves with a fork and add to a baking dish.

Lower oven temp to 350.  Mix in your cream cheese, egg, salt and pepper, chicken and half of the cheddar into the squash. Stir until creamy. (It helps to beat the egg first before adding it). Top with remaining cheese and jalapeños! Bake for 35 mins; broil for 2 mins at the end.

It is so hard to describe the flavor of this dish. It’s a combination of Mac and cheese, a pot pie and jalapeño poppers. It just too damn delicious for a description!!!! Just try it! I promise you will love it! ❤️️

Low Carb Squash Casserole

Ever miss those casseroles with the butter crackers??? But obviously can’t eat them on your low carb diet??  I do. Often. Haha So I randomly bought a 3lb bag of squash on my last shopping trip. So, naturally I had to make a casserole.

What you will need:

4 cups sliced yellow squash

2 eggs

2 tbsp mayo

1 1/2 cup shredded cheddar cheese

1 tbsp garlic powder

4 tbsp French fried onions

Combine eggs, mayo, garlic powder, 1 cup cheddar and 2 tbsp onions in a large mixing bowl.  Add in the squash and mix until all pieces are coated. Pour into baking dish. Top with remaining 2 tbsp onions and then top those with the remaining 1/2 cup cheese. Bake at 400 degrees for 30 mins on middle rack!

Bacon & Onion Casserole

Feast your eyes upon a breakfast casserole that is just as good as eating a yummy breakfast sammich! And what’s better than caramelized onions!? Well… Maybe bacon… Ok, of course bacon. But the onions are a pretty darn close runner up!

What you will need:

1 cup diced sausage (I used patties)

6 pieces bacon

Quarter cup chopped onion

5 eggs

1 tbsp heavy whipping cream

1 cup shredded cheddar cheese

Salt/pepper to taste

Directions:

Preheat oven to 400.  Lay bacon on foil covered sheet pan and bake for 12-15 mins; set aside to drain on paper towel.  Reduce oven heat to 350.  Chop onions and put on the baking sheet in the bacon grease.  Broil onions on high for 5 mins.  Chop sausage and add to a greased baking dish.  Mix eggs and cream together until completely combined. Add the salt and pepper to your liking. Pour egg mixture over sausage and then add in your onions. Cover with half of the cheese and then top with all your crumbled (or chopped) bacon. Top with remaining cheese.  Bake on 350 for 30 mins! Let cool for 5 mins before slicing or scooping! Top and serve with a dollop of sour cream or mayo! Enjoy!
